The whole D3 series pretty amazing. The D700 is no slouch either although everyone’s curious to see what the follow up is going to be.
However, on Y!A professional camera is usually another word for entry level DSLR in which case the D3100 deserves your attention.

The only Nikon professioal APS-C sensored dSLR is the Nikon D300s (soon to be replaced buy the D400)
There are two Nikon professional full frame dSLR’s, the Nikon D3s and D3X. The D3s will be replaced by the Nikon D4.
These replacements will occur in the first quarter of 2012
